With 7.0, is there a way to decline the integration of AI or will I need to revert to a prior edition (since my version was forcibly updated on me).

AI is not integrated.
You can use AI if you can install feature plugin “AI” , WP by itself only has “Connectors” to add connections to LLM’s, without plugin(s) its doing nothing, especially if you wont add any connectors.
