I understand how frustrating it must be that you can’t update product prices in the backend anymore, especially since it used to work fine for you before. Let’s get a clearer picture of what’s happening.
Can you let us know when you first noticed this issue — was it right after updating WooCommerce, your theme, or any other plugins? That timing can help us trace what might be causing the change.

I first noticed it on Aug 31, I believe we’d recently updated a whole bunch of plugins prior to it happening.

Thank you for sharing the video — that makes the issue much clearer. Since you mentioned it started right after updating several plugins, the best next step is to run a conflict test to rule out whether the problem is coming from your theme or another plugin.
Please try temporarily switching to a default theme such as Storefront or Twenty Twenty-Four, and deactivate all other plugins except WooCommerce. Then test adjusting the product prices again.
If it works in that setup, we’ll know the issue lies with either your theme or one of the other plugins, and we can narrow it down from there.
