When I try to reactivate the plugin on the dashboard it says: “Plugin could not be activated because it triggered a fatal error.

When I originally updated the plugin, the website went down until i deactivated the plugin.

I have just tested and tried installing the plugin on a fresh WordPress installation and it worked fine.
You can test it yourself by using a service like tastewp.com to quickly create a fresh WordPress installation for testing and installing the plugin there.
Can you please delete the plugin you have on your website and try to install it again from scratch.
Deleting the plugin will not affect your saved submission or delete them. They will remain in the database.

Can you please try to install the plugin manually?
Please delete the plugin.
Then try to install the fresh .zip file on your website after downloading it from the plugin page.
