It’s unclear to me what the issue is. Are you saying you can add the subject but wish there was a unique field for it? Or that you are unable to figure out how to add the subject to the mailto links?
You should be able to simply edit the mailto link and add the ?subject=x, like you say. So the final thing looks like mailto:example@gmail.com?subject=test+subject.
Something like this could only exist specifically for the editor you are using. Which one are you using?

The editor is now called Block Editor. Gutenberg is just the development name.
However, I can’t find a plugin right now that would fulfill your wish there. I think it would certainly be possible as an individual development, even if the interface is not clear to me at the moment.
From my point of view, you therefore have 3 options:
- Look around the plugins. Limit your search to Block Editor and Email field or similar. I have just looked and found nothing.
- Contact the Gutenberg team and ask if they know anything about this: https://github.com/WordPress/gutenberg/issues – I don’t think this would be added to the block editor, but you can try.
- Or find someone who can help you personally to develop something like this yourself. You can find someone like that here: https://jobs.wordpress.net/
I haven’t found anything either, that’s why I posted here. I know the extra field from a newsletter app I use (Laposta) and from Joomla! and am surprised that it requires custom code to get this basic function into WordPress.
For now we’ll have to work with ?subject=
