I don’t seem to be able to check the box to display $0.00 as (text below).

Is that a pro option please?

The Free product functionality is PAID functionality.

If you are using the Free version but you want the Free product functionality you may use use this plugin https://wordpress.org/plugins/free-product-for-woocommerce/

But, In this plugin there is no option to customize text for Free product.
