I still have an issue with Safari: when trying to re-vote, I get the question without any other message, whereas I have set a message saying “you already voted” which works perfectly under Firefox and Chrome.
Do you have any idea on how I can resolve that?

So, please make a DB backup for your safety (you can use UpdraftPlus). Then, clear all the caches. Make sure the cache is excluded on the page where the given poll is located. After clearing the caches, please try to check the case with either the Incognito mode or another browser/device.
Please check this and let us know about the outcome.
Thus, it seems that the limitation is not taken into account, as I was able to vote again whereas I did vote a few days ago. It seems that several IP are given for my own name. Is this because I am admin?

As to your current request, we are not sure what exactly your IP sends back, so we can’t say anything for sure about it.
Please check whether the IP of the current voting and of the one held a few days ago are the same or not. Also, please let us know whether you have cleared/excluded the caches as we mentioned in our previous answer or not.
As can be understood, different IP addresses have been taken for different cases. Maybe, you have passed the poll with the PC at home, then, with the mobile WIFI, then, with the 4G mobile internet. Also, there are some mobile operators, that change their IPs constantly. That means different IP addresses can be displayed and we can’t control this process.
So, in your particular case, it would be quite effective to use the Cookie (Cookie and IP) method of detection of the users to be sure the poll is closed for the users.
