Thanks for reaching out. Can you confirm that you have prices set for each variation? Would you mind sending a screenshot of one of your variable product/variation settings for us to take a look at?

Could you clarify if the Manage Stock option is selected, under the Inventory tab, please? Example screenshot of this directly linked here.
Furthermore, could you please share a copy of your site’s System Status? You can find it via WooCommerce > Status. Select Get system report and then Copy for support.
Additionally, could you also provide us with the fatal error logs (if any) under WooCommerce > Status > Logs.
Once you’ve copied each, you can either paste them in your response here, or use https://pastebin.com/ for pasting it there and sharing it with us.
Furthermore, based on the screenshot shared here, kindly note that a product with 1 variation might as well be a simple product instead.
