Yes, this is possible.
For that, you can follow one of the paths below:
1) To create a custom field on your subscription form and then create segments based on this custom field:

You can then use these segments as lists for your PN emails.
2) To create a list for each category and add a List selection block to your subscription form:

Then you can set up your PN emails (with specific categories) for these lists.

Thank you for your help!
I do have lists set up already- the issue is that I can’t seem to program the email to send to a specific list automatically once the blog they are subscribed to is updated. Unless this is all I do, and I can trust that every time the blog is updated the subs will get a notification?

So if I got it right, you already have the lists created and you’d like to send only specific blog posts to specific lists.
If so, you need to create several Post Notification emails, each pointing to a specific list. For each email, you need to choose to include posts with a specific tag or assigned category: https://kb.mailpoet.com/article/329-automatic-latest-content-widget

I actually have all that done.
What I want is a reoccurring email to be sent to a list every time a blog post is made.
For example, when Cat Blog is updated with a new post, subscribers to Cat Blog will receive the email that I crafted.
I just need to know that the automation for sending an email to a list will happen automatically each time the blog post is made. I do have a post notification email designed to what I need to display, but I do not know if it will send automatically for every new post made to the blog which is what we want.
Right now, I have the post notification email set to go to the list of subscribers to the specific blog “immediately.” But, it is not clear if that is reoccurring every time there is a new post or if that means it’s a one-time action I will have to manually repeat.

Yes, if you create a Post Notification email that sends an email “immediately”, it means that this email will be sent each time you publish a blog post.
