Upon checking your category sitemap, we are seeing 44 listed URLs.
Could you provide us with some example URLs of your category archive pages that aren’t being listed in the sitemap?

I found the problem in your other post. When there is a post that is not assigned to any category, the category will not appear in the sitemap.
I have another question.

Is it normal to redirect to this address?

To answer your last question, Yoast SEO has the code which redirects /sitemap.xml/ by default to our /sitemap_index.xml/
