For changing text, we generally suggest using a translation plugin, such as Loco Translate. Using that, you can change the specific text in your site to any other text you like.

Looking at your screenshot, it looks like the sort block section is part of your theme. You can confirm this by temporarily switching your theme to Storefront. If that’s the case, you could also contact the theme authors to check if there is an option to change that specific text.
