Thank you for the updates.
Just in case you did not check it on this page you can see how to check if your WebP images are displayed on your site.
However, it looks from our end that you are using <picture> tags in order to display your WebP images.
In general, there are a few reasons why WebP will not be displayed correctly when using <picture> tags:
– background images added via CSS
– there is no WebP generated
– page element HTML is loaded after Imagify looks for the source code to apply WebP markup
– images are external
Regarding the last product page you provided it looks that all your images have a WebP version and they are displaying in WebP. I have tested also through PageSpeed Insights here and it looks that the section “Serve images in next-gen formats” has a great score. There is only one suggestion for this image but it looks that it is an external image.

When I checked it at the Google Page Speed, results are different every time
https://www.linlin.in.th/coffee-beans/african/ethiopia-sidamo-g2/ (now it webp but Google Page Speed said “Serve images in modern formats”)
If I will check it tomorrow, it can be fully compatible for Google. Next day – “serve…” again.
The question is – why my results are not stable? Is it cache issue?.. (WP Rocket)
Also, at the same time some product pages are satisfied Google (webp), some – not (how come)? – same server state, same cache but different output.

It looks that your WebP images are still served correctly in WebP even though on PageSpeed Insights you have a warning regarding this image but as you can see on the source code on this screenshot it is served correctly.
I am not sure what might be the reason as it is served in WebP. However, did you try to improve also the rest of your sections on PageSpeed Insights?

if these pictures were displayed correctly, I would have a green score
I just had a look at your site – it’s very nice – the product images on the African Coffee section I looked at are webp but your banner is in .jpg.
Have a look at the images in the media library to see if you have any theme sizes that still need processing. I found it would process the main image but then tell me it had 5,6,7 etc thumbnail sizes to process, not always but sometimes.
When the images were converted they were fine, my issue was I couldn’t get them converted no matter how long I left it.
Test your site on GTMetrix.com and Nibbler.silktide.com too.

In order to check if your images are displayed in WebP as you are using <picture> tags, you can do that by looking at your page source code. Use the “right click” on your mouse and then “View page source code”. You should see your
elements replaced with <picture> elements, and the URLs will have “.webp” appended to the end. Please see further details on the following link https://imagify.io/documentation/how-to-check-if-webp-image-is-displayed-on-your-site/

Yes, ALMOST all images are .webp but Google Page Speed can not recognize it and it lowers my rating because of this.
