To change the refund date of an order, you should do it by going to that specific order, changing the date created, and then updating that order. This will send a receipt/invoice with the date that you selected. Here is a screenshot:

The customer will receive an email with the date you set.

Date order should stay the same, for example 21 May 2021. And now I would like to change the refund date from 23 June 2021 to 01 June 2021 when it actually happened. I need it for correct accounting.

The procedure I previously shared with you will not modify the date on the Order Details page, but it will only send an email to the customer with the new day set.
That being said, I’ve to say that at the moment, there’s no default option for that in WooCommerce, and setting that as the default would require quite a bit of additional coding. Please kindly note that this requires some custom coding – which goes beyond the scope of support we can provide in this forum.
