Opt-In emails not being received

I’ve set up a Mailchimp form successfully, and so long as the form remains set to “single opt-in”, everything is fine.
As soon as I change to double opt-in, I’m stymied. No one is receiving an opt-in email, but other is an error being generated anywhere I can locate.
I’ve read all the threads I can find relating to this, but nothing seems to make a difference.
This was however working okay a couple fo days ago, but with no change on my part, seems to have died on me.
Can anyone help?
