While you can “compose” single fields within the message instead of using the “{all_fields}” variable, there’s currently no way to “split” the field name and field value this way, I’m afraid.
There’s on direct option to “style” e-mail notification too but we are already working on improvements to this editor so notifications could be more customized, including HTML templates (so you’ll be able to create custom e-mail template too).
I don’t have ETA but it’s already planned for future and will be available with one of future releases.

I do want to mention, when I’m looking at form submission entry’s I see in the backend in wordpress THAT is more of what I’m looking for. I’m sure it’s not easy to implement, but if that look could be exported to the emails that would be great!
Also, I know it has been discussed to add a feature to RESEND an email but I want to add to that option (for when it’s developed)
I ran into an issue where a customer had input a bad email address and so I got a bounce back notification about it, so they NEVER got their initial “confirmation” email, NOR the email I tried to reply back giving them a quote. But just resending the email wouldn’t have helped, because the email address was WRONG, so it needs to be editable at the time the form is resent. 🙂
