There’s no such setting currently for address fields, I’m afraid.
It will be improved with one of future versions (as well as other aspects of how address field works, to make it more configurable/versatile) but for now a workaround would be to compose your own “address section” out of separate single fields so for country list you could use standard select list with your own pre-defined options (countries in this case).
