How do I get the extra profile information (for example, I added a phone number) to display on a user’s profile page?

You should get the value using the get_user_meta function.

I do not know how are you doing your profile but you will need to find which hook is being executed and then include in the callback the call to: https://developer.wordpress.org/reference/functions/get_user_meta/
