You can achieve it by our product wise processing days settings.
GO to processing days tab > product wise processing days > select your product and give processing days of 1 and also enable the option named “Processing Days calculate including with Current Day” and “Processing Days calculate including with weekends”

Sorry for our previous reply. We suggest the exact opposite in our previous reply.
The product wise processing days 1 set for the products that you don’t want the same day delivery.

I have the similar question, can we open same day delivery for some specific Shipping Zone with some selected product / categories?
for example:
Product Name = iPhone
Shipping Zone = Zone-One (London)
The same day delivery is open only for iPhone for London only and the rest shipping zones are disabled for same day for iPhone
