The payment gateway typically controls setting order statuses. “Processing” generally means that an order has been paid for and is ready to be shipped. One exception to this is the Cash on Delivery (COD) gateway. Since it is shipped before the order is paid for, it goes to processing before payment.

What payment gateway are you using on the site? Are these orders already paid for?

Thank you for your help and for the link, happily the issue has been solved. I don’t exactly know what has been done though as this time it was someone else that fixed it.
