How to post code snippets

I notice that when I go to add a new post, I see various options in the text editor, one of which is ‘code’, but this only appears for about a second and is then replaced by the toolbar that contains the buttons for bold / italic styles, unordered lists, colour etc.

Does anyone know how I can access the toolbar that will let me insert code snippets??
