A slight update,
I changed the block in the page to a “reusable form” as opposed to the “Gutenberg forms” insert. And when I tested it and viewed entries, the test entry logged as did several entries I’ve made throughout the day, which weren’t recorded previously.
But then I tested one more time, and that entry has not shown up yet.
I was also able to get email notifications to send by resetting all the email notifications to their default except for “TO:” which I set to another Gmail I use which…isn’t ideal…but at least I can get some email notifications to work.

Not sure if I get you clearly. The Form Entries and Email Notification works perfectly as far I am aware and this seems odd.
Are you using the form as a Reusable Block and that’s what causing this issue? Or you are using it as a normal block?
Anyway, this seems odd, there may be some misconfiguration or a conflicting plugin causing it. Please follow the documentation if you are facing any difficulties in setting up your form.

Or try to deactivate all other plugins to test if there is any conflicting plugin that is causing this issue.

I am using the form as a reusable block; does that not enable the entries to be logged in the Gutenberg Forms dashboard?
I think the email issues were being caused by another plugin, I’ve resolved those and they are working now.
