By block title, you mean headings (h2, h3, h4)?
I guess the theme may be overwriting the color styles set on the frontend.
If the color is directly applied to the heading block, the problem still persists?
If instead of a predefined color, we choose a custom color with a specific color code different from all the predefined ones, e.g.: #1718A9 and apply it to the block, does the problem still happens?

No, custom color also apply to the heading block
I have tested to change my default color of heading and canceled the color defined on heading block, the default color applies so you are right the theme overwrites the color styles set on the frontend but it does only on frontend, on backend the color is the one from group and it does only on heading black not on paragraph, list
