Refresh Entire Sitemap After Template Changes

Hi, Yoast folks!
Thanks for a fantastic plugin. I see that the sitemap XML files are using the Last Modified date for each individual post and page on my WordPress site. Makes sense.
My problem is that I am attempting to have Google reindex my entire site (4000+ WP pages) after making <title> changes in my theme files. (My old title scheme left out some key elements on the mobile theme, and once Google switched to mobile indexing priority last year now a bunch of my titles look terrible in search results.) I’ve disabled the Yoast XML sitemaps, flushed the cache, and re-enabled it — but of course it looks identical, since the posts and pages haven’t been modified.
Question: How can I generate a sitemap with updated dates for all my site pages? Does Yoast ignore template changes (even in its own <title> builder)? Am I going to have to manually modify all 4000+ pages, or find a plugin capable of “touching” everything on the site? Or can Yoast bring all my Last Modified dates in the sitemap to 2020?
