Can’t Stop Auto Updates

No matter what changes I make in wp-config.php I can’t stop WP from updating itself. I changed define( ‘AUTOMATIC_UPDATER_DISABLED’, true ); and define( ‘WP_AUTO_UPDATE_CORE’, false ); but still no joy – it’s as if nothing has been done. I have a plugin that doesn’t like the new version(s) and every time it updates it shuts me down. And, no, I can’t replace the plugin yet.
Current version just updated to 5.3.4. I’m on a dedicated server.
