I am using this plugin with WP Rocket and Woocomemrce. don’t know which plugin is incompatible with your plugin, but when I checked my site for themes and plugin, they are still visible/.

Sorry, but you might not be able to hide everything regarding WooCommerce through this free plugin. WooCommerce is a heavy code with lots of assets, common classes and JavaScript variables, those can be addressed through the replacements functionality https://www.wp-hide.com/documentation/html-css-js-replacements/
