What do you mean by upload? Are you uploading thru CSV? API?
Well right now the default product type is Simple. I need to change this to “Variable”

There isn’t a way to set a variable product type by default. You would most likely have to unset all the product types except for variable. Maybe create a custom product type and make that the default.
The only other way to do this is by using a CSV importer and upload your products that way and make their type a variable rather than simple.
Well I’m using a plugin called Dokan and it lets vendors sign up for my website and basically turns my website into a marketplace like eBay. Woocommerce is how the products are added and whenever a product is added through the vendor dashboard it automatically makes it a simple product but I need it to be variable.
Have you reached out to them for any advice or to see if maybe they have some sort of hook available to make that happen on their end?

@serafinnyc is correct on all counts – This would either need to be through a hook that Dokan provides or by unsetting *other* product types through custom development by a web developer or expert as listed at https://woocommerce.com/customizations/
