Thank you for the detailed information about your site and the problem you are having. I ran a test on your site and can see that there was an error during checkout and checking the Google console shows 500 server error as you’ve mentioned.

If you have a 500 error revealed in your JS console, it’s mainly due to a PHP Error.
To better understand what’s happening, I’d like to take a look at your site’s logs.
To find the generated logs:
1. Go to WooCommerce > Status > Logs
2. In the top right corner, open the drop-down and select the latest fatal error log, then click view to load it. Here’s what that looks like:

I did some more testing.. it looks like the simple sales tax plugin is the culprit. I’ve reached out to them and see if they can look into the error and see if they find anything. I’ll open a new ticket if this doesn’t resolve it.
