Cannot edit custom order field in admin

Hello!
I am using WooCommerce 4.0.1 and I used the instructions available at: https://docs.woocommerce.com/document/tutorial-customising-checkout-fields-using-actions-and-filters/
I have used exactly the code snippets given as example at Adding a Custom Special Field and it does not work: I can see the field, but cannot edit or save it.
How can I edit and save a custom field in order admin?
