To disable insertions in particular post you can use individual exceptions:

There is no such shortcode but I’ll put your proposal on the todo list.
The latest development version supports shortcodes to disable ads inside content:
https://downloads.wordpress.org/plugin/ad-inserter.zip
List block numbers that you would like to disable”:
[ADINSERTER disable="n1, n2, n3,..."]
Please note that the shortcode can disable only blocks (ads) after it is processed.
If you put it inside post or page then it will disable ads inside post or page content and everywhere else if blocks (ads) are processed after the content (e.g. for sidebar widgets).

But it doesn’t work…
