Hey Vallered. I’m a user of Blocksy and Gutenberg.
You can, and should, choose your fonts in Customizer > General > Typography
There aren’t, to my knowledge, any typography settings in standard Gutenberg blocks.

that helped, you are 100% right. The enhancements to choose a different fonts in an standard Gutenberg text elements where caused by 3.rd party plugins I activated (like CoBlocks etc.). And in some cases these fonts enhancements are limited to a few fonts only, it denpends on the plugin.
I am quite new to gutenberg (just a few days), just switching from Elementor to it, I think (and hope) that this is the right decision. There are currently quite some limitations though, e.g. no alpha settings (opacity) in color settings (especially for background colors I am missing that), no negative margins to overlap blocks (columns), and for animation, motion and parallax effects I have to use other plugins, and responsive settings are limited.
May I ask which 3.rd party plugins you are using for advanced design?

I am now using both of them, exactly what I needed.
Final question: Is there any plugin around to create modal windows/ pop-ups? None of the major Gutenberg plugins are offering this, but for UX reasons (especially on mobile) this is from my point of view an important feature to avoid a vast amount of new pages opening.

I did a search on wordpress plugin directory and I found this plugin, I did not tested it but it seems to be able to create pop-ups.
