Try manually resetting your plugins (no Dashboard access required). If that resolves the issue, reactivate each one individually until you find the cause.
If that does not resolve the issue, access your server via SFTP or FTP, or a file manager in your hosting account’s control panel (consult your hosting provider’s documentation for specifics on these), navigate to /wp-content/themes/ and rename the directory of your currently active theme. This will force the default theme to activate and hopefully rule-out a theme-specific issue (theme functions can interfere like plugins).

My actual theme is “Twentyseventeen”
I can access the control panel, there are all pages and articles, menus, etc…
Same error if I try to change theme.
I tried to access via file manager and rename the directory of twentyseventeen, but nothing has changed…

I followed @macmanx’s steps and found that deactivating Gutenberg Version 6.8.0 restored the site. I had just updated Gutenberg and the new version appeared to be the culprit.
The Block Editor (formerly Gutenberg) has been built into WordPress since version 5.
The Gutenberg plugin is now just a testing ground for new features, so we don’t recommend using it on a live site.
I solved!
It was the “Experiments” in the plugin page of Gutenberg: they were all checked after updating to version 6.8.0
I unchecked all and the site is now online again.
