CSS and dropdowns

Hi,
I can see this has been posted about a few times but I don’t seem to be able to find the resolution I need for my issue simply by reading through the advice shared here.
Ultimate Member is apparently ruining my dropdown ‘Select2’ fields all over my site and I can’t get rid of it’s styling due to the overuse of the !important tag. I have tried following the instructions shared in other posts where code is added to counteract this – https://github.com/ultimatemember/ultimatemember/issues/522
My assumption is the code in the above linked article should’ve been added to functions.php? Is that correct? It hasn’t worked, which is making me wonder if that was the right thing to do.
Here’s a couple of screenshots to show a dropdown affected by the issue and one that strangely has managed to get away with it!
