When you change qty, stock status must be instock.
If the product is out of stock and I am managing the stock levels of the product, if I I insert new stock to that product shouldn’t it automatically change it’s status ‘in stock’?
Because as it is if I need to update products which are out of stock, I need to reset each product’s status to be in stock and then modify the number, which is an extra step when modifying a lot of products.
I also tried testing out changing the status of an out of stock product to in stock. Then once I insert a stock value and press save, it switches the product’s status back to out of stock.

Ok, i see it. That´s a bug.
Edit.: in new WooCommerce version, you dont have option to change stock status, when manage stock is on. You can try it in product detail.
You must set manage stock off, change status and save.
After this, you can set manage stock on and change product qty.
This is WooCommerce behavior, not plugin issue.

Okay I’ll test it out and let you know, thanks!
I tried setting manage stock off and changing the status and saving. Once I re-tick manage stock to allow me to enter a number and I press save, it switches back the stock status to out of stock.
Once I set stock status to in stock without manage stock ticked, I cannot add any quantity. If I tick manage stock then it will allow me to add quanity but on save it will switch the status back to out of stock.
Can I provide you with credentials to the site to test it out?
