I have that option selected to show a right sidebar but it never shows.
Here is an example. (https://palateteaser.com/category/dinner/) This is from my categories page. There is not a sidebar but on my home page and posts the side bar is there.
Anything I can do? I must be doing something wrong.

Have you designed your page with Elementor? You are using Elementor full-width template, therefore, it has no sidebar. Try to use default layout to fix it.
Thanks for the reply. Yes, I am using Elementor but I am using Default Layout for my archive page, the same I am using for my pages and posts.
Any other suggestions? Could there be another place in Elementor to have the Default Layout selected?

It is difficult to tell why it is using elementor full-width template. There are no default settings for category pages to select elementor full-width layout in the theme. Try to disable/enable plugin one by one to check for a possible conflict.
You are not using the default layout. You have created the page with Elementor. Try to edit it and select default layout from the page attribute dropdown.
Would there be CSS code that might force the default layout on archive pages?
No, because the page is designed with Elementor full-width template so it removed the sidebar completely.
