Editable field to select a Category

I have a client that wants visitors to be able to create profiles. The profile is to contain clubs they are willing to be a substitute player. For example, if someone want to be available to substitute for someone sick playing cards. They want to put about a dozen activities that people can add and remove the clubs they are willing to act as substitutes for. They do not want users to be able to edit other people’s profiles — just their own. Finally, they want to have a page for each club showing the list of people willing to substitute for their activity. In other words, the field that they check will need to act like a category for posts determining if a profile is to be displayed in that view. The menu and home page would link to pages where volenteers to act as substitutes would be listed.
