Hi! Our plugin is translated to German, but the Formal German translations have not been officially approved yet: https://translate.wordpress.org/locale/de/formal/wp-plugins/woocommerce-pdf-invoices-packing-slips
As an intermediate solution I recommend using the plugin Language fallback, which allows you to select German as the fallback language for when formal german translations are not available.
This is assuming both your admin and site are set to German and that you don’t use any multilingual plugins like Polylang or WPML.

You didn’t mention that you are using German (Switzerland), for which we have even less translations and no official translator: https://translate.wordpress.org/locale/de-ch/default/wp-plugins/woocommerce-pdf-invoices-packing-slips
In that case I definitely recommend using the Language fallback plugin, this should resolve your issue
