It sounds like you might have updated Stripe before updating a very old version of WooCommerce?
Are you using the latest version of WooCommerce(3.4.2)? If not, download the newest version, unpack it, and upload the folder to your /wp-content/plugins folder, overwriting the previous version.
We update all plugins every day, 7 days a week. We deleted stripe manually on the server and Woocommerce caused a second fatal PHP error with another plugin, so we deleted that plugin. Then Woocommerce caused a 3rd fatal error with another plugin. We deleted that one. That happened 7 more times until we gave up and deleted Woocommerce completely from the server. We downloaded the new version, uploaded it manually to the server, and it fixed the error. We then had to go back and reinstall all of the other plugins. The updating of Woocommerce via WordPress updates caused all of the errors.
@joyryde – It sounds like the update failed to finish, resulting in missing files. I would check your server logs *before* the update to see if there was a communication issue with wordpress.org, perhaps the update was interrupted somehow?
