I would like to include the contents of one of the form fields into the payment description (a dossier number in this case). Is this currently possible, possibly by using a hook to modify the description text?

Not yet, but I just coded it for you.

You will need this beta:

To install the beta, go to Plugins > Installed plugins, remove Paytium (data will not be removed) and re-install the above version via Plugins > Add new > Upload plugin.

There is a small typo in the manual: $payment_details[‘payment_etails’]
This should be payment_details I guess?
