Our plugin doesn’t do anything at all with product SKUs. In fact, if you look at the code of our plugin, there is no mention of “sku” anywhere. So, it sounds like the issue is coming from the WooCommerce Product SKU Generator, but I don’t know what our plugin would be doing that it wouldn’t like.
Apart from the fact that when i Uninstalled your plugin, everything now works!
There is of course a possibility the your plugin has interfered with with WooCommerce Product SKU Generator or vis a versa but the reality exists that they do not work together.
I will test this by reinstalling your plugin to see if the error still exists and then disable WooCommerce Product SKU Generator. If the error goes away then we know that the two plugins are not compatible.
WooCommerce Product SKU Generator is a must use plugin for anyone who needs to create SKUs for tens of thousands of product variations that do not have there own standard SKU’s ASINS or GTIN’s
We would not be able to list if it wasnt for this plugin, as we have 300,000 custom variation products

How did your test go? Also, when you have both plugins active, and you’re seeing the issues, can you check your error logs to see what errors might be getting logged at that time?
I havent has time to fully test it but i do remember, selecting a field other than GTIN but not “none”, on a setting in your plugin, so it might be this. I will get back to you about this, as i am sure its me and not your plugin.
