How do I select the parent page when I can see it in the list?

Simply click the parent page, it will become bold and will fill in the field with that value, then make sure you publish/update your post.

Do I have to start with the first letters of the parent pages name?

No, the plugin will search any part of the parent pages name, for instance, to find ‘steven’, you could start to type ‘even’ and it will appear in the list of potential matches
