 * So I had the same issue. Hopefully this works for you. I re-enabled the Gutenberg
   editor and edited the checkout page.
 * In Editor mode, I then converted the page back to ‘Classic Checkout’, saved the
   page, disabled the Gutenberg editor and all my additional fields were now showing
   again.
 * This has taken me about 24 hours to suss out the issues with WC 8.7.0!

 * Has this now been resolved or are you still waiting? I was going to ask for some
   customization of the plugin and willing to pay but will be not if you have not
   received your work.
