Here is what you can do:
1) Create a separate list for each language.
2) Create a new form on your site with a List Selection block
3) Put this form on a separate page on your site.
4) Send your customers an email with a link to this form so they can subscribe to a list of a preferred language.
5) Use these lists to send your customers emails in different languages.Hope it helps, please let us know if you need further assistance!

Can you please confirm that the issue is isolated to the Post Notification emails?
If you send a test newsletter to yourself (a test list), does it work? Please test not with a preview but with by actually sending a newsletter.
Also, please send us a screenshot of the MailPoet > Help > System Status page. Please ensure to capture the whole page or make several screenshots.

You’re right, subscribers who are not subscribed to a specific list shouldn’t receive emails sent to this list.
Do you see this subscriber in the list of users to who it was sent? You can check that by clicking the sending status for a particular email.
Also, do you see them opening the newsletter in the detailed stats?
Can you please share a couple of screenshots so we take a look? Please make sure that the sensitive information (first part of the email address, for example) is blurred on them.

Based on the error, it seems there’s some PHP extension missing in order to activate MailPoet 3 properly.
Please refer to the official PHP PDO installation guide or contact your hosting provider’s technical support for instructions on how to install and load the PDO_MYSQL extension: http://php.net/manual/en/pdo.installation.php

Can you please clarify what emails are you testing exactly?
I can sign up with the same email address several times on my test site and a confirmation email is sent every time.
However, a Welcome email is sent to each subscriber only once. Meaning that if a subscriber unsubscribes and then subscribes to the same list back, they won’t receive a duplicate Welcome email.
Although if you delete a subscriber from MailPoet, they will receive a Welcome email again if they re-subscribe.

Can you please try re-saving permalinks in wp-admin > Settings > Permalinks? You don’t have to make any changes.
Also, can you please share the original URL and the URL from the newsletter?

Can you please check if you see the same text/buttons in English if you create a new form/newsletter?
I tested it on my site and newly created forms are created in German after I switch the language, but they remain in English for old forms.
