This is the EXACT issue I am having also. If the Mail Chimp plugin does not send the double opt-in email, why is there a choice in the plugin to choose “double opt-in”?
Second: How would one go about making sure MailChimp sends it?

Yes, I did double check all of those. I am not getting any error messages, it’s just that none of my tests have received a confirm email and no new contacts have been added to my mail Chimp list. I made sure that the right list name is being used, etc.
