Unfortunately CoCart only supports loading cart sessions from guest customers. You would have to either ask your customers to login to continue or create a magic login that does that for them.
A magic login will be added to the roadmap as a future feature.

Our latest patch v3.12.0 solves the character encoding issue.
Opened a new issue with further explanation of the differences currently.
You will have better luck with Products API v2. There it provides valid shortcuts to add items to the cart. We are aware of a character encoding issue with attributes. There is data that is used for display and data that is used for requests. Not sure why yet they don’t match or if it’s on our end at this time.

I don’t normally examine plugins from CodeCanyon for many reasons, one being compatibility but I am willing to see what is possibly causing the issue.Do you have a staging copy of your site that I could examine with CoCart enabled?
You never said the products had conditions on them. I didn’t see the use of the notices showing either. The notices in the cart response would have given a reason as to why the products removed.
However, it is possible that the conditions of the product did not validate in time which is why they suddenly not show up and then return.
What plugin are you using for deposits and mind sharing some of the products setup so that I can reproduce?
Can you replicate the issue and do a video recording with loom as this is a peculiar issue?
I don’t know how you have it returning like it does. I have created a variable product with the same attributes and mine return sanitized and match for both endpoints.
Maybe there is something that you have done differently in the backend that I missed or you have another plugin that filters the attributes but the data fetched is the same.
I have compared the data returning on the products page vs the REST API and they match.
Any other information you can share that might help would investigate further.

Seems odd that you would get a CORS issue after coming back. Do you have the CORS add-on installed? This solves most CORS issues.
