I assume you already have auto updates to WordPress Core and plugins disabled. * The problem you’re going to have is that as soon as you update plugins, that’s going to overwrite any customisations. So my suggestion would be to first see if you can move the customisations into a separate custom plugin. What I would usually recommend is to test your theme or plugins to find out if any of them could be the issue. This process requires making a copy of the site, either on a test site, or in a local environment. Then, set the theme to a default WordPress theme, and see if the problem persists.
