 * You’re right, most of those plugins offer similar functionality as doing them
   manually if you don’t mind editing config files.
 * As best as I can tell, there was an auto-update error that’s now been fixed. **

 * The **Export Tool** lets you download the following items from your WordPress

 * Many **themes** store their **settings** inside the **WordPress database**. As
   you have transferred the site’s content **but not** its database, many theme 
   and plugin settings and configurations are **missing**. The export tool does 
   not transfer **plugins** or **themes** either.

 * You can add menu items to the top bar across the screen as follows:
    - Visit **Appearance > Menus** in your **WordPress Admin** dashboard
    - Select the **create a new menu** link
    - Choose a **Menu Name**, and under Menu Settings, select the **Top Bar Navigation**
      option, then select the **Create Menu** button: [
    - Add the **About** page to the menu under the **Pages** tab on the left and
      select the **Save Menu** button

 * No problem! I sometimes find it difficult to choose between plugins, and I’ve
   used WordPress for many years!
 * I use **Wordfence Security**. More sites use **Wordfence** ([https://wordpress.org/plugins/wordfence/](https://wordpress.org/plugins/wordfence/))
   compared to **All In One WP Security** ([https://wordpress.org/plugins/all-in-one-wp-security-and-firewall/](https://wordpress.org/plugins/all-in-one-wp-security-and-firewall/)).
 * I’m **not** familiar with **EWWW Image Optimizer**. It’s plugin page ([https://wordpress.org/plugins/ewww-image-optimizer/](https://wordpress.org/plugins/ewww-image-optimizer/))
   says it only optimizes images but **does not** host them. **Jetpack by WordPress.
   com** optimizes **and** hosts your images, which should make them load much quicker.
   Jetpack also offers **many** other useful features for your site, so I’d use 
   that.
 * Out of the **optimization** plugins, I’d choose WP-Optimize – Clean, Compress,
   Cache. However, **I prefer WP Super Cache** as it’s easier to set up (it’s developed
   by the same company behind WordPress): [https://wordpress.org/plugins/wp-super-cache/](https://wordpress.org/plugins/wp-super-cache/).
   And you can use **WP Super Cache** with **Autoptimize**: [https://wordpress.org/plugins/autoptimize/](https://wordpress.org/plugins/autoptimize/).

 * Could you please explain what you mean by **_the food of the header categories_**?
   Do you mean **_the font_**? If so, you can make the menus in the header bold 
   by **adding this code** to the **Customizer**:

       .navbar .navbar-nav>li a {
       	font-weight: bold;
       }
       ```
   
 * Keep in mind that some **themes** will allow you to make **additional changes**,
   such as changing the font weight (e.g., from normal to bold), through the **Customizer**.

   It’s part of the PopularFX: [https://wordpress.org/themes/popularfx/](https://wordpress.org/themes/popularfx/)
   theme.
 * It seems like this plugin/theme **controlled** your site’s appearance. Your site’s
   appearance **changed** once you deleted it. If you **install** the plugin again,
   you should be able to **restore** your site’s appearance.
 * You could also try **installing** the **Storefront theme** to see if that works:
   [https://woocommerce.com/Storefront/](https://woocommerce.com/Storefront/). It’s
   made by the **WooCommerce developers** and should work correctly.

 * The code you added to your **wp-config.php** file is correct.
 * It’s possible that something from your **web hosting control panel** is set to
   auto-update WordPress. For instance, **Softaculous** can auto-update WordPress,
   which you can try **disabling**.
