thanks a lot for your fast feedback.
I believe you are right, however, after executing problemhandling mode by the
Health Check & Troubleshooting plugin with a standard theme and zero plugins active (except your’s), the issue persists…Furthermore, I have another site with a different set-up and far less plugins and same behaviour after upgrade to WP 5.5.
(Login is still reported although excluded, Logoff continues to properly not being reported)
What would you recommend?

With the update to WordPress 5.5, a migration tool known as jquery-migrate will no longer be enabled by default. This is the reason for Democracy Poll no longer working.
A plugin called “Enable jQuery Migrate Helper” serves as a temporary solution, enabling the migration script for the sites to give old and outdated plugins like Democracy Poll and as well old and outdated themes a chance to survive and their authors some more time to update, and test, their code.
It would be most favorable, if Kama (the author) would at least modify the related part of this plugin’s code to help it survive on the longer term…

But no, I don‘t use page caching.
Furthermore, it worked all the time prior to the last update…
But anyway: what influence could that caching have?

Indeed, it would – if possible – be beneficial, if both (old and new) eMail addresses could be accessible.
(Remark: the related standard WordPress eMail uses both in one message.)Best regards

I made it and it works (almost…).
Unfortunately, I receive the old eMail-address as well…
This indicates that the eMail notification obviously comes at a point in time when the data is not yet properly changed in the WP database ;-(, hence, even my shortcode retrieves the old information.
So, I have to wait for your solution, even that you indicate this topic „resolved“;-).

I was wondering wether I could program a shortcode myself through adding a filter (as suggested in your docs) and providing through „args“ the user_id to the shortcode in order to return the (new) user_email.Would that work?

It was “Hummingbird” with page caching for NON-logged-in users.
Nothing really to play around with (other than switching on/off).But no problem. This caching is anyway not a perfect method as my pages are somewhat dynamic…

Indeed, when switching off caching (which was enabled for NON-logged-in users only, while the notifications are only being sent when logged-in), the issue disappears.
Is there a way to allow caching and at the same time avoid double notifications?
