 * Can I only use style.css in a custom template? I don’t see how it would be different
   from using the override function if I can’t change the HTML.
 * And if so, all the default styles are still being used even when I create a custom
   theme. Would be much easier if I could turn off the default CSS when creating
   a custom theme so I don’t have to override all styles.
