I made a tutorial here:
Basically, you create a new page and redirect the shop page to that page. You can use pretty much any page builder to build your new shop page.
If you want to keep the default URL, then, this is the tutorial you need:

How about adding a custom field to your product, “status” for example. When the product is sold, you change the status to “sold” and create a filter that for “sold” product, redirect to a new page.
That means you don’t actually delete the product but “archive” it.I’ve sent you via email yesterday
