If the Yoast breacrumbs are disabled, we would not expect Yoast to override them. We would like some more information.
1. Can you confirm you are using the most recent Yoast SEO, v11.3? If you update, does the issue resolve?
2. Are all your non-Yoast plugins and themes also updated?
3. Can you confirm you are using WordPress 5.2.1? You can check by clicking on the W in the top left and selecting About. If you need to update, please check with your host provider. Please know that if you are using an older version of WordPress Core you may experience unexpected behavior with Yoast. 4. Can you provide a link to the issue? Let us know too what the breadcrumbs should be.

3. I confirm. I’m using WP 5.2.1.
4. The site is actually in progress (in “coming soon mode”). If you like I can provide to you in pvt some credentials for a staging version of the site. At the moment I solved the problem by styling Yoast Breadcrumbs (I decided therefore to activate) like my theme’s Breadcrumbs (that disappear as soon as I activate the plugin), but this is not exactly what I expected to do…

Can you please let us know what theme are you currently using so that we can test it on our end?
It looks like a premium theme. Therefore, we recommend you to please reach out the theme developer to see whether there’s a conflict between Yoast SEO and that particular theme.
