We have checked with current version of woo custom stock status plugin in our local server, but it is not showing the wrong status as you mentioned.
When we check the order, it shows the same status when ordered that product.

I don’t see what your video explains? This shows the front end.
When I view an order in the backend which has been placed it is showing the status after the order (sold out).
In de order notes I can see the stock changed from 1 to 0. So the backend should show the in stock label, not the out of stock label.
We checked backend and it shows the same status when we ordered that product. Here we have attached the screenshots

Did you install any other plugins recently, some plugin or theme compatibility may cause the issue.
No new plugins. It happened after your update.
We have added log codes to check the issue in the attached plugin. please install this version and place an order to replicate the issue, then let us know.

‘m joining the conversation because I have the same problem with the update.
A customer called me in panic because in his order email he was notified of an item out of stock on the email with ‘stock status’, even though he ordered the last one. When I checked he had ordered the last one. The email would have the notion ‘in stock’ and not the status once the order has been placed, i.e. ‘out of stock’
